Healthy home-made curry, a tasty and warming curry dish.
Serves – 4
- 2 tbsp Coconoil
- 1tsp mustard seeds
- 1 large onion, peeled and sliced
- 3cm piece fresh ginger, peeled and finely diced
- 2 garlic cloves, peeled and finely diced
- 1tsp garam masala
- 1/2 tsp turmeric
- 1 x 400g canned chopped tomatoes
- 400 ml vegetable stock
- 1 red pepper, deseeded and chopped
- 300g potatoes, chopped
- 1 tbsp cider vinegar
- 2 tsp sugar seasoning
