Pepper and potato curry

Healthy home-made curry, a tasty and warming curry dish.

Serves – 4

Ingredients

  • 2 tbsp Coconoil
  • 1tsp mustard seeds
  • 1 large onion, peeled and sliced
  • 3cm piece fresh ginger, peeled and finely diced
  • 2 garlic cloves, peeled and finely diced
  • 1tsp garam masala
  • 1/2 tsp turmeric
  • 1 x 400g canned chopped tomatoes
  • 400 ml vegetable stock
  • 1 red pepper, deseeded and chopped
  • 300g potatoes, chopped
  • 1 tbsp cider vinegar
  • 2 tsp sugar seasoning
